Bacalao (salted local codfish) is soaked for three days before transforming into this classic simple Yankee dish of three two-ounce cakes air-fried with a bit of butter and a side of tartar sauce. The tartar sauce is made with an avocado oil-based mayonnaise. Serves 2 (three per person).
